Pumpkin Brownies

1     15 oz can of pumpkin

1 cup vegetable oil

4 eggs

2 cups sugar

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

Preheat oven to 350 degrees.  Beat together eggs, oil, pumpkin and sugar.  Stir in remaining ingredients until evenly mixed. Pour into a greased and floured 9x13 inch baking dish.  Bake for 30 minutes or until center springs back when touched.  Serve with whipped topping or a cream cheese frosting.  Chopped nuts can be tossed on top of the frosting.

 

Cream cheese frosting:

 

1/2 cup butter

8 oz cream cheese softened

1 lb confectioners sugar, sifted

1 tsp vanilla

 

Cream butter and cream cheese until smooth and well blended.  Sift confectioners sugar gradually into creamed mixture, beating well after each addition.  Spread on cooled cake.   Cut brownies into squares, whatever size you prefer.
